yeah, i had the same list of requirements too for a mac text editor...then i figured out that TextMate really handles all the stuff, and really well. Some things might work a little differently than what youre used to, but once you get it it's really pretty slick. On top of that its really easily extensibly in a lot of ways (to the point were even I could figure out how to dome cool stuff with it).
i know you said you already know and love textMate but I'm just saying if you dig in a little deeper you might be surprised. Code completion is actually (sorta) supported...its just hidden away in the "esc" key. type "ad-esc" and you should get a nice list to popup. I havent goten far enough to test if that includes user-defined vars and methods.
