Red5 (version 0.4.1) currently requires that you write your
server-side code in Java. Obviously that covers the full OOP language,
if that is what you are looking for. ;-)
We are also planning on adding JavaScript, Ruby, Python, and other
scripting languages so that the Red5 API is accessible through these
as well. That should be out in the 0.7 release. Please take a look at

The other thing that should be mentioned here is that FCS didn't play
well with other servers (may have changed in FMS, I haven't upgraded yet).
There are ways to interact with other servers, like databases and web
servers, but none of them are easy or convenient. So the chat server is
effectively in a sandbox, which may or may not matter at all for your
purpose.
This is an excellent point Ryanm. I think that they have addressed
this to a certain extent in the newest version, but it certainly
doesn't compare to the flexibility that Red5 has in place.
