Andy,

first of all, you'll have to have a crossdomain.xml which will allow 
your 'local' flex app to access a remote service. The destination only 
provides at compile time what is the correct url channel used by that 
destination and that info will be hardcoded in your code.

You can do it by changing the channelSet URL for that remoteObject at 
runtime or add a new channelSet in the services-config.xml and hardcode 
your desired url and point those remoteObjects to that destination.

Don't forget any CFC need to have access=remote but it should be like 
that no matter invoking cfcs served from the same webserver as the flex 
app or from a different one.
