That would be because there are a limited number of ways to communicate between ColdFusion and Flex. CFC's are the (IMHO) easiest ways to do that. Is there a particular reason why you can't use CFC's? Look at http://www.adobe.com/devnet/flex/articles/helloworld.html for a good introduction.
