1. As far as I know, there's no way to do this via a metadata tag. There's an XML file deep in Flex Builder's Eclipse plugin directory where all the Flex Framework components have their values hard-coded to display the standard view.

2. I don't know the answer to this one.

3. Only include the classes you want to use as components in the manifest file. In the Project Properties, there's a screen where you can choose the compile in the rest of the classes that you need.
