They would run the test slowly for a number of reasons. First, test
machines are built for creating large loads not setting speed records.
Second, the manufacturer wants the wing to last as long as possible and
adding dynamic effects (generally) only makes matters worse.

You should see the tests that jet engines are subjected to.
