I think it would make more sense to just define a property. I can't see someone wanting to turn the yoke on and off. They either have a real yoke and don't want to see a virtual one, or they don't. For this simply setting /sim/model/hide-yoke in preferences.xml would suffice. It has tech added benefit that you don't have to hit a key to hide the yoke every time you start up. For those (few, i think) who want to toggle it on and off in flight, it would be simple to add a key binding to their local keyboard.xml or joystick file. Or, if there is enough demand, a binding could go into the default keyboard.xml I would have no problem adding such an animation to my planes if there is a demand for it, though I personally would never use it. I also believe that it should be a convention to do the same with /sim/model/hide-pilot.
