I was able to do it. You do it by setting Flightgear to use Native-FDM and a transfer protocol and speed of your choice. Take a look at the native_FDM.cxx file to see the data sequence which is being sent. In addition I used a port sniffer to also look at the data coming out of the port and try and correlate it. On the Matlab side of things, I found that you need Matlab 7 or greater to make it work. There is a toolbox available for reading UDP or TCP. You can use that to read the data coming out of Flightgear. If you have any problems I will be glad to assist you.
