When I run Flightgear, I never see anything remotely like those clouds. Mine are thin and streaky or foggy, sometimes dark (if bump-mapped), sometimes light, but never like the ones in the image. I've tried all sorts of different combinations of cloud settings and bpp values, but without success.
I don't know Mac, I use Win. Win version has a starting interactive panel which we use for setting an option called "3D Clouds". Then we get those nice 3d clouds. Do you have such an interface in the Mac version too? If not you can manually append a command line option to fgfs executable.
