The Mac GUI is a custom thing Arthur made - it has no relation to the 'FGLauncher' Stuart is referring too (except that it does the same job). The relevant thing is it has an 'extra options' text field that is passed to the FG command line; Status or Todd, you need to figure out what those options are to make multiplayer work (I've never tried), and paste them into that box.
