Have you had a looks at http://www.simkits.com/ ?  They have all kinds of 
instruments intended for simluation.  I they have started producing models 
that can be USB connected.  The older models had a special control box and 
only a windows interface was available for the older design (there is a GPL 
X-Plane plugin for this older controller).  I don't know if the USB models 
have interface specs available.
