I have been running flightgear in a multihead setup for sometime now. At least with the video drivers I am using I didn't need to do anything other then tell flightgear to use the full resolution of my combined display. I am running an Nvidia GPU and this works with both Xinerama and TwinView. I have two 1600x1200 diplays and to get FG to use both displays I simply tell it that I want it to use a resolution of 3200x1200.
