However, if you've got a few tools, you could rip apart a $20
twist joystick and do something like:

The real problem with this, though, is that a $20 joystick doesn't
really have the resolution necessary to make sensitive controls. But it
does get pedals and controls with a real throw, and that makes a huge
difference.
