I have had the fullscreen crash myself. The way I found to get around it was to 
start in fullscreen.
For this you need to start FG from a terminal.This will also allow you to 
change aircraft.
Its awhile since I ran from a terminal but I think the commands are something 
like this
FGFS aircraft=(the A/C you want) geometry=fullscreen
