I posted about this a long time ago. I found that it is almost impossible to directly record as you are flying. Instead what I found to work was to "record" the fdm data stream while flying and then use that to drive a reduced resolution flightgear session and record that reduced resolution session. Look back in the archive for his email list for my notes on how to do this. These were very detailed.
