Flightgear (fgfs) takes command-line switches for many options,
including the aircraft to use.  There are a few graphical launchers:

Kfreeflight http://kfreeflight.sourceforge.net/
FGRun http://sourceforge.net/projects/fgrun/

Neither are packaged by Ubuntu

I either use fgrun or launch from a command line interface.
