Found it! They aren't installed as part of a normal "make install"
but are installed by "make install-desktop". As these are *always*
installed under /usr/share so that the desktop environments can find
them, regardless of any --prefix setting, the "make install-desktop"
has to be run as root.

I'm adding notes to the README and README.Unix to explain this.
