No question is stupid as long as the intention is to learn in this land of FME!
I have seen this happen many a time when I was a learner of FME (Which I continue to do even today and I am still a learner:-)).
One check that you could try with the workbench mapping is to see if the attribute names(column names) in your MapInfo TAB file are in upper/lower case.
ESRI Shape always ( I believe) takes them in upper case. Becuase of this there will be a feature connection existing between the MapInfo TAB and the ESRI SHP definition but not the attributes themselves. (That could be one reason for you to see the right column names but not the attributes in them).
 
This could also be checked by exposing the attributes on the destination SHAPE file in FME Workbench and to see if the incoming ports are red/green/yellow.
 
It is my gut feelings (which may not be right) that you have yellow ports, which mean mismatch in the attribute column names because of the upper/lower case issue.
 
Check this and see if this solves your problem.
