Have you set the symbol.font.family FO parameter
(http://docbook.sourceforge.net/release/xsl/current/doc/fo/symbol.font.family.html)
to Symbol in your stylesheet?
<xsl:param name="symbol.font.family">Symbol</xsl:param>
I don't know how you would go about adding to the stylesheet as I am not
familiar with XMLMind.
