If you've got the same Symbol.ttf as I have (from Windows) you're currently out of luck. This font doesn't contain a Unicode "cmap" table which FOP can't do without. Unfortunately, this font uses Symbol encoding which is not implemented for TrueType fonts, yet.
Can't you work with the default Symbol font that is already built in to PDF (Symbol is a base 14 fonts)?
