Its upto you to choose either NepaLinux or Ubuntu. If you use
NepaLinux, all of the applicatiions will be in Nepali.
I haven't seen Ubuntu in Nepali. Do I have to customize myself or can

Not only Ubuntu, but most of the GNU/Linux can be in Nepali. For it you
need to run Nepali Language pack. We still haven't release it for public
