For open and close quotes to straight quotes: type a straight quote in the document (by turning off smart quotes), then copy/paste the straight quote into the replace box. I just tried it and it works.
Curved apostrophe to straight apostrophe is a bit tricky since after turning off smart quotes you still get a curved apostrophe. I suspect that there is no separate character for a straight apostrophe. You might have to apply Courier New to get a straight apostrophe.
