In general, those displays are pretty bright when viewed head-on. So your worry is more likely to be overexposing than underexposing.
I would go with a color negative stock because you have so much additional freedom to overexpose. The negative stock is inherently compensating and highlights won't block up as easily as reversal. And I would probably use something in the 100 to 200 ASA range.
