Little Clambakes
8 oz. cream cheese, softened
8 oz. can minced clams
1 Tbs. bottled onion juice
1/2 tsp. liquid red-pepper seasoning
4 dozen butter crackers

Soften cheese in a medium bowl. Drain clams very well; add to cheese
with onion juice and red-pepper seasoning. Mix well to blend. (If
making ahead, store, covered, in refrigerator.) Just before serving,
spread clam mixture on crackers, abou 1 tspful on each. Sprinkle
lightly with paprika; place on large cookie sheets. Bake at 400 for 5
minutes, or just until heated through but not browned. Garnish with
sliced black olives and watercress leaves, if you wish.
