Steak and Bean Chalupas
 
1 tablespoon vegetable oil
¼ onion, chopped
1 sirloin steak (8 oz.), sliced
1-2 serrano chiles, finely chopped
1 tomato, chopped, divided
1 can (15 oz.) BUSH’S BEST Black Beans, drained and rinsed
8 4 inch tortillas
4 cups shredded lettuce
2 cups Queso Anegjo
1 avocado, peeled, pitted, and sliced
 
Serves 4
 
Preheat oven to 325º.  Heat oil in medium skillet and sauté onion for 2-3 
minutes until softened.  Add steak and cook over medium heat until desired 
doneness.  Add chiles and half of tomato and cook until softened.  Stir in 
beans and cook until heated through.
 
Place tortillas on baking sheet and heat in oven for 2-3 minutes or until 
crisp.  Spread bean mixture on tortillas.  Top with lettuce, remaining tomato, 
cheese and avocado slices.
