That's because ZFS works best with huge amounts of (Kernel-)RAM, and i386 32-bit doesn't provide enough adressing space. Btw, I've tried ZFS on two FreeBSD/amd64 test machines with 8GB and 16GB of RAM, and it looks very promising.
