A centralized location is very serious to me as a developer. Actually,
I bought an MS-DOS 7.1 disk on ebay because things kept moving too
much in FreeDOS. It's not stable at all.

Well, I think this problem is not really specific to FreeDOS.  In fact I
expect that the main Git branch of any open source project will be
moving pretty fast.  This includes projects such as Open Watcom,
(mainline) GCC, and dosemu2.  (Well, especially dosemu2...)

What I normally try to do in these cases, is to either (1) stick to,
say, a specific released version of GCC with an official version number,
or (2) for certain other projects, stick to a particular Git commit in a
Git repository.  Sometimes I also "fork" a third-party Git repository
just so that I can use the "fork" as a mirror backup.  Just my 2 cents.

I am not sure which particular project(s) in FreeDOS you have trouble
keeping track of.
