You can browse the Sourceforge Svn repository at

You'll find a mixture of C and Assembler for the FreeDOS kernel.

AFAIK, mostly ANSI C, with some Assembler in the mix.  Any language
that can be compiled to run under DOS can be used.  Pascal used to be
extremely popular.
