yea, you can do something like
a = MRIread('aseg.mgz');
rhovol= a;
rhovol.vol = zeros(size(rhovol.vol));
lhip = find(a.vol==17);
rhovol.vol(lhip) = left_hippo_rho;
MRIwrite(rhovol,'rhovol.mgh');
