It would work better over iax (smaller overhead above udp), doubly so
with iax trunking, of course.

Also, the IP-over-satellite vendors support significant rtp/udp/ip
header comression over the gateway<->sat<->gateway portion of the link.

IIRC, ppp stacks often support rohc as well.

So, at least for the straws between the pipes, vocoders can be useful.
