Nice work David and Richard. PortAudio is a library that talks to alsa etc, rather than yet another linux sound system. So you won't see any "portaudio" devices.
On my Linux box running FreeDV I see devices like "pulse", Logitech USB Headset etc. Not sure about the choppy audio, mines OK.
