I just tried the encoding server plugin and I've got a few comments on it:

Going through the title list is tedious. The DVD I just backed up had 76 titles and the main feature was number 68. Perhaps if they were sorted by size?
There doesn't seem to be a way to record subtitles or to choose alternate languages.
I don't like the options menu. I'd like to choose the quality of the rip and have it determine the file size automatically
After determining file size, it should ask if I want it broken into CD size chunks.
If I choose to use CD size chunks, then the quality should be increased up to the the size of the number of CDs used.
I don't want to choose xvid each time, that should be a config option.
It should ask which subdirectory to store the file in.
The ending file size was 784 MB, way too big for a CD.
The video file shouldn't be put into the video directory until it's completely done encoding (otherwise people wonder why ff/rew don't work, why it's not all there, etc.) This also serves as notification that the job is done :)
The DVD wouldn't come out after ripping, I had to use 'eject' from the console.

Otherwise, great plugin!
