I do raw HDTV recordings, but have a script running in the background to
encode them once the recording has finished.  The trick is to run this
script and it's processes at minimal priority so you can go ahead and do
other stuff without it bothering you.  

Recording HDTV doesnt use much CPU if you arent compressing on the fly,
but you need to make sure you have enabled DMA or your HDD wont be able
to keep up.  I tend to be watching movies, recording HDTV and
compressing previously recorded TV all at once without a glitch being
noticed.  But I am using a 2800 CPU.
