Some of the chemicals in beer simply react with each other over time,
changing taste and look of a beer. Light and to some degree heat
accelerate that process a lot, but even without such influences regular
brewed beer generally only holds fresh for 3-6 months.

If oxygen can leak into a bottle, this aging process accelerates a lot
and can even lead to beer getting really bad.
