If you have used Fusion Pro marks, they maybe the source of your
"color". Supposedly they print black only :)
At the press in the job editor you should be able to preview
separations, if it's just the marks turn off the other colors while
printing.
Also you could create a hot folder for greyscale that will convert
everything to black.
