What do you see in the job editor?
Is the Black Only Hot Folder set to convert to GreyScale

If you have used Fusion Pro marks, they maybe the source of your "color".
Supposedly they print black only :) At the press in the job editor you
should be able to preview separations, if it's just the marks turn off the
other colors while printing.
Also you could create a hot folder for greyscale that will convert
everything to black.
