What color are you trying to convert it to, greyscale? If so, there is a
Pitstop action that will do this.

Short of that, you can use Adobe's tool "Edit Object" under the Advanced
pull down menu, right-click (WIN or Mac with MightyMouse) or CTRL-Click
(Mac) to pull up the dialog menu and choose edit image to get it into
Photoshop and change the color there.

I have a rgb image embedded in a pdf document

I can convert text and line art to the color I want

But changing the rgb image nothing seems to work

I can go into inspector and change it to a cmyk but then I can convert it to
black

any help would be appreciated
