Depends on what you're trying to convert to and if you want Pitstop to
muck it up - If going from RGB to CMYK I would STRONGLY urge you to make
an action that uses the correct color profiles that I assume you have
for your environment.
If you are trying to make it, let's say a duotone, you are going to have
to edit the image (via the edit object tool) which should open it in
Photoshop (if you've set your Pitstop preferences accordingly) and then
go through the mess of trying that..
All depends on where you are going with it...
