I downloaded a fresh copy from svn and well, now it is working, with
both incubator and full doc. :)
@ Adrian : xsltproc was installed when I did try this weekend…

"xinclude" is not supposed to be run as a shell command to build the
documentation. It looks like something is wrong in your working copy. I
suggest running "svn clean," deleting or moving out of the documentation
directory all of the files not under SVN version control, and rerunning:
autoconf && ./configure && make
