Uhh... click in text, command-A or 'select all' from the edit menu,  
command-c, click in textedit command-v. Two clicks, three key combos.

Of course, the pdf I just chose to test this with opened in Adobe  
Acrobat Reader, and it's got a 'Save as Text' command in the file  
menu....(this is version 9)

The same commands as above worked in Preview as well.

That said, PDF files CAN come with all sorts of annoying DRM-type  
stuff (can't print, can't copy, can't save, can't look at odd-numbered  
pages, etc), or, as you may have found, not actually consist of text  
at all, but merely pictures of the pages.
