Based on some experimentation, the following works (see questions at the
end before attempting):

1) Create a folder on your stick named 'Music'.

2) Option-launch iTunes, and when prompted, select the 'Music' folder. 
iTunes will make a library folder within the Music folder (you can enter
whatever name you wish).

3) Make sure that the iTunes preference under 'Advanced' for copying
music into your library _is_ checked.

4) For each artist that you want to add to your stick, choose 'Add to
Library...' and from the resultant dialog, navigate to your iBook's
iTunes library and choose the folder with the artist's name.  This will
then copy the folder and its contents into iTunes, and add the music to
the Library index.

5) Quit iTunes.

6) Re-launch iTunes.  iTunes will remember the previous library location
(in this case your memory stick).

7) Verify which music is in your library on the stick and quit iTunes.

8) Eject your memory stick and re-launch iTunes while holding down the
Option key, and pick the library on your iBook.  If you forget to hold
down Option, iTunes will prompt for the library location if it can't
find the previous library.

9) You can now delete music from your library on the iBook, if desired.  

Questions:

What happens to playlists? Do you have to recreate them in the new library? 

What about syncing to your iPod? I don't have an iPod, so have no experience.

What happens to cover art?  Do you have to re-download it all?
