Not to prevent them but there's a command 'dot_clean' which will delete them.

Close any windows on the device in Finder.

Start up terminal

and do:

dot_clean /Volumes/<name of device in Finder>

So if, for example, you have a memory stick labelled 'Untitled' in the finder 
it would be

dot_clean -m /Volumes/Untitled

The -m means always delete the '._' files.

Then eject the device in finder after doing this.
