If you can get a card of USB ports for the expansion slot (see some discussion 
thereof here: 
http://www.mactalk.com.au/24/70837-pcmcia-usb-card-wallstreet-powerbook-g3.html),
 then treat yourself to a universal drive adaptor (also from OWC: 
http://eshop.macsales.com/search/universal+drive+adapter/?utm_source=ccc&utm_medium=application&utm_campaign=092611).
 

Alternatively, you could use a USB enclosure (example from a UK vendor: 
http://www.usbnow.co.uk/Hard_Drive_Enclosures-2.5%22_Hard_Drive_Cases/c10_24/p2058/2.5%22_IDE_Hard_Drive_Caddy_-_Blue/product_info.html).
 However, such enclosures are limited to 2·5-inch IDE/PATA devices, while the 
universal adaptor can do 2·5-inch and 3·5-inch for both IDE/PATA and SATA so 
you'd be ready for anything.

Then install CarbonCopyCloner (from http://www.bombich.com/) to clone the 80GB 
HD to the SSD. Swap in the SSD and off you go! 

I can't speak from personal experience of USB cards in Wallstreets (my G3 mac 
laptop is a Pismo which has built-in USB 1.1 ports) but CarbonCopyCloner and 
the naked hard drive adaptor made it simple to copy my Pismo's HD to an SSD. 10 
minutes to open her up and perform the swap, then she just booted up from the 
SSD just fine. No reinstall, no glitches, 25% reduction in boot time and 
complete quiet.

You can then use CCC (and the universal adaptor or enclosure) to back up the 
SSD to the HD every day. (CCC can be set to do daily incremental back-ups.) 
Then you can recall previous versions of stuff (just like any normal backup 
system) AND, if the SSD ever goes belly-up, just swap the HD back in.
