I'm quite happy with Illustrator 10 and Photoshop 7 in OSX on my Pismo 400. Photoshop 7, especially, seems optimized for OSX performance and is fairly "snappy" (what ever that means) in OSX. It runs as fast as it does in OS9 or under OSX's classic mode. Any quickness issues just relate to using it on a G3 400 Mhz machine. I just installed Photoshop 7 earlier this past week. Illustrator 10 seems a little sluggish compared to it under OS9, but I'm really not too bothered by it. I'm not really good at giving any type of benchmark, but I hope this helps you.
