Oooooooh, I went round and round with this a bit ago on a clients machine. If it is the same thing, this is what has happened, and how to fix it-
OSX doesn't depend on resource forks in the way OS9 did- file extensions rule, just like they do on windows. There is a file OSX uses to tell it what to everything that ends with .jpg, etc, etc. Sometimes something happens to that file, in my case it was the user accidentally setting everything to open with simpletext. Things got goofy, and OSX would try to open bunches of apps within simpletext... ... Which is why things work correctly when you delete itunes, as it can't find itunes to open things in so it works normally. Just a file/creator issue. All you have to do is delete the file in your user/library/preferences folder that stores the type/application data for your user and it'll resolve itself. The bad part is that this was a big ago and for the life of me I can't quite remember which file it is, but if I believe it was: "com.apple.LaunchServices.plist" Log out and in again (or restart, or force quit the finder), and everything should work correctly.
