You can't upgrade the RAM to maximum with only 128 MB sticks. The Pismo only has two RAM slots, meaning you can only have two RAM sticks. If you get two 512 MB RAM sticks, you'll have 1 GB of RAM. But that is probably overkill for almost everything. 320 MB means that you have a 256 MB and a 64 MB. I would suggest just getting one stick to replace the 64 MB one. Then you could either get a 256 MB one to bring the total to 512 MB, or you could get a 512 MB one to raise the total to 768 MB. And it would cost less than buying two 512 MB sticks.
As for replacing the hard drive, I'm not sure what the best hard drives out there are. However, if you want a really good one, look for one that has fluid bearings (makes it quieter) and runs at 5400 RPM (most laptop drives run at 4200 RPM, so 5400 RPM will be faster).
