When I was trying to install OS X on a beige G3 I had to pull all but the original 
factory RAM.  I saw a huge thread on the Apple forums about removing just about 
everything from the Mac that wasn't factory (and making sure the target hard drive was 
less than 8GB) and sure enough I finally got OS X to install.  I then put the RAM back 
in and it worked though I wouldn't recomend putting OS X on a beige G3.  It was a tad 
sluggish.
