Now I see that OSX has a sleep mode, but this does not seem to shut the
computer down completely, and I am wondering if it is safe to leave it in
that mode when going from home to work or whether I should shut it down
completely and just restart when I get home.

I've been using sleep between work and home for a year now on my 17" PowerBook. Removing the battery will kill sleep mode, but for transporting between work and home it's perfect. All I do is open the machine up, choose a different Location out of the Apple menu, and I'm on my wireless network and surfing away.
