A lot of the time when Apple specs RAM maximums for systems, it is based on RAM that's available on the market at the time the system was shipped. Barring issues like systems not recognizing higher-density ram (like the Lombard or Beige G3's) when bigger DIMMS become available, they'll work.


An old example: the PowerMac 7600 says that it supports 512 Megs maximum, but that was only because when it shipped 64 megs was the max that could be put on a 5V 168 pinn DIMM. They run 128 meg dimms just fine, which means their real limit is 1 Gig.
