If it's not a Firewire iMac, you're really limited to minor league audio, but can
do some MIDI work.
If it's a FireWire capable iMac, one option is a MOTU 828 hardware interface, and
you could run the included AudioDesk program, or upgrade to Digital Performer. It
would be a rockin lil rig, and you could add a MTPavUSB do take care of MIDI.
Oh yeah...ad an external FW drive also [for audio], with the Mercury chip set
interface....
There's other audio platforms that you could run, I believe, but my experience is
in MOTU and slightly in PT....
Soon will be a couple other interfaces for FW audio, such as Metric Halo's Mobile
I/O, and Crest Audio has one soon.
Depending on what exactly you wish to do in terms of track count and such also
greatly  affects which interface/software you can run.
As far as Protools goes in terms of an iMac, I believe you'd be pretty much
limited to the PT Free, or possible LE, but you couldn't use the Digi 001
interface, as that requires PCI. And generaly, Digidesign's hardware and software
only works with theirs, tho you can import /export audio files into things....
Check out the MOTU stuff, and the Metric Halo piece. They'd both work well with an
iMac, me thinks....
